Job Summary: Reporting to the Senior Manager over Poultry Innovation, the Manager of Product Commercialization is responsible for leading the commercialization process for product renovations, innovations, quality, and cost improvements. The position works closely with culinary innovation, quality assurance, foods safety, operations, suppliers, and supply chain to create commercialization strategies that define product specifications and ensure consistent taste and quality across the Popeyes supplier network.
Roles & Responsibilities:
Main commodity support is poultry, working with other commodities on an as needed basis for US and Canada.
Lead end to end commercialization process for innovation, renovation and spec management for all poultry products.
Perform yield studies of raw and cooked products.
Participate in sensory and physical evaluations, internally and with labs, to ensure product meets specifications.
Assist in central location testing for new and existing products.
Lead research, testing, and evaluation of new ingredients or other technology, ensuring product specifications are met.
Develop and maintain process management spec match requests in partnership with third party Supply Chain
Ability to support successful product launches in a rapidly changing environment
Work closely with plant manufacturers to ensure scale-up and product production is a match to gold standard samples.
Participate in ingredient evaluations at test laboratories, confirming all parameters meet specifications
Able to deliver written and oral complex technical messages to cover project status clearly, while bringing technical knowledge and transparency to departments inside and outside of R&D
Demonstrate the ability to troubleshoot and resolve various project challenges with the support of cross-functional team members
Support ongoing evaluation of work processes in product commercialization, product approval, and quality assurance to keep pace with the changing needs of our company and customers.
Support Popeyes branded events for Franchisees or Public Relations.
Traveling to suppliers, events, or meetings approx. 60% of the time.
Attending tradeshows or conferences to network and stay up to date with ingredient and technology trends.
Skills & Qualifications:
Must live in Miami, FL or relocate to Miami for the position.
Bachelor’s degree in food science/technology, Meat Science, Poultry Science, or other related disciplines.
Need current passport and ability to travel outside of the US, specifically Canada.
Comfortably working in a kitchen environment, Popeyes store training is required.
Ability to prepare and execute cooking as needed.
Ability to lift 50 pounds.
3-5 years of experience in food manufacturing, research and development, or related field.
Poultry experience required.
High organizational skills.
Knowledge of USDA and FDA regulations as they relate to standards of identity, ingredients, nutrition labeling and label claims.
Proficiency in Microsoft Office (Word, Excel, PowerPoint, and Outlook)
Knowledge of applicable procedures, requirements, regulations, and policies related to product commercialization.
